Sweet and Savoury Pulled Chicken Salad

Despite the dark and drizzling clouds hanging over Oslo these days, I still feel the imminent days of sunshine just around the corner. I must admit, I'm not great at eating salads. Some of the leftover I-don't-like-veggies attitude from childhood still pushes me away from these fresh bowls of nutrients. However, I am more reflected as an 'adult', and I realize that I sometimes have to push myself to try new greenery in order to grow. Thankfully, this salad is pretty child-friendly on the ingredients but oh so delicious!

Sweet and Savoury Pulled Chicken Salad
 For 1 person

1 chicken filet
bbq sauce
Spinach
1/2 diced avocado
1-2 tbs mild feta
2-3 large strawberries
1 tbs pumpkin seeds
1 tbs sunflower seeds
------------------------------------------------------------------------------------------------------------------------
1. We usually make a lot of pulled chicken at once, both because Pål eats a lot and because pulled chicken stores well in the fridge for leftovers. So feel free to increase the amount of chicken filets and simply adjust the amount of bbq sauce. I did not write an amount on the bbq sauce because this depends on the pot or pan you use to make your chicken. Here are two methods:
  • Crockpot: Put the chicken in the pot and cover at least halfway with bbq sauce. If you use a little more, no problem. Make sure to turn the chicken over once or twice in order to cover it with sauce. Follow standard crockpot times (4-6 hours on high or 6-8 hours on high). The chicken is ready when it can easily be pulled apart and shredded with two forks.
  • Oven: You can also use a baking dish. Follow the same method as above, covering the chicken approx. halfway and tossing to coat the filets. Stick it in the oven at about 160-170C for 1-2 hours. Again, the chicken is done when you can pull it apart with forks.
2. I mixed my salad up right in the bowl I was going to eat it from. Fill the bowl with as much spinach as you want. I used about 2 cups, but

3. Add your pulled chicken, diced avocado, quarter-sliced strawberries, crumble the feta and top this beauty off with your seed mix.
